I am sure that I am breaking some sort of blogging rule by posting a salad recipe on a Friday. Salads are for Mondays after you have been eating crap all weekend long and you decide, Oh, it’s Monday, I am going to eat salads all week but then you only eat salad on Monday. For lunch. Since it is the holiday season, I was just thinking that maybe you are entertaining and just dying for a show stopping salad recipe. Or maybe you are procrastinating at work and trying to plan dinner for next week. Or maybe you are a person with self control and eats salad all week and on the weekends, too (what is your secret?!)

Pimento cheese is a staple in most southern households and growing up, you usually could find pimento cheese or chicken salad in the fridge at my house. Happy New Year! We have all been struggling with a pretty serious cold at our house. First, Grace started feeling sick. On New Years Eve, after throwing up a few too many times, I took her to the doctor to find out that she had a bad cold that had settled in her chest and she had two ear infections. As soon as we left the parking lot, I started to feel congested, too. I can’t say I’m that surprised. When a snotty baby sticks her hands in your mouth all the time, it is pretty much a miracle if you come out on the other side without contracting his or her illness. Even Andrew the H is coughing. She is a sneaky one with those snotty hands!

All of a sudden, in the midst of sleep deprivation and desperation for a quick snack during the first two weeks with a newborn, I shoved pimento cheese in my mouth and loved it. {How-to} Make Homemade Ricotta Cheese

Just call me Master Cheesemaker. On second thought, don’t. But I would like to inform you that I have officially made homemade ricotta. Twice. Yep, you read that right. I am officially crossing “make your own cheese” off the bucket list. And guess what? You can, too! After several years of carting my plastic wrapped, brand new cheesecloth from apartment to apartment, I finally busted it open and took it for a test run. Watch out Cowgirl Creamery, here I come. No, I joke. I could never do anything that required molding or resting, aging or brining. But what I can do is this. Add milk, cream, and buttermilk to a pot. Heat for 15 minutes. Let sit for 30. Drain in cheesecloth. Eat. As my Food Network leading lady, Ina Garten, would say, “how easy is that??” It is ridiculously easy indeed, Ina.

Apparently, it’s good to be a tax lawyer in Charlottesville after tax day! Andrew the H has two days off this week…Surprise!! So, even though the weather report is threatening a few thunderstorms (which I will no longer take lightly, see last week’s events), we are going out to enjoy the cloud-covered sun. After weeks of seeing very little of Andrew on the weekends, I am excited to finally have some husband-wife time. Even if that means that I have to endure hours of the History Channel (seriously, how many Civil War shows can you possibly have? No disrespect, but geeeeeeze).
