Happy New Year! I can’t believe that 2015 is here. 2014 has been a pretty great year, but I am even more excited about what 2015 has in store. Before we start on our healthy new year resolutions, I thought I would leave you with one last cookie recipe. Because you really can’t start your new resolutions on a Thursday. That would be weird. Resolutions, healthy habits, diets – all of these things start on Mondays, right? So for now, we can continue to eat cookies!
I am sure that I am breaking some sort of blogging rule by posting a salad recipe on a Friday. Salads are for Mondays after you have been eating crap all weekend long and you decide, Oh, it’s Monday, I am going to eat salads all week but then you only eat salad on Monday. For lunch. Since it is the holiday season, I was just thinking that maybe you are entertaining and just dying for a show stopping salad recipe. Or maybe you are procrastinating at work and trying to plan dinner for next week. Or maybe you are a person with self control and eats salad all week and on the weekends, too (what is your secret?!)

It’s pretty clear that we love pimento cheese around here. I mean this is the second pimento cheese recipe I have posted in less than a year. Pimento cheese is a staple in most southern households and growing up, you usually could find pimento cheese or chicken salad in the fridge at my house. But I never really was a fan of pimento cheese until after I was pregnant. It is so strange how your tastes can change after having a baby! Now I can’t get enough…clearly.
I hope that everyone isn’t already over pumpkin recipes because I have the best one. Yep. Delicious, cinnamon-spiked pumpkin cake covered in cream cheese frosting. I’m sorry that I have been sitting on this one for weeks. I’ve been meaning to post the recipe but have no excuse. In all honesty, I made this in the middle of September and again at the beginning of October. Oh, and again at the end of October. I’ve been so busy eating pumpkin bars that I clearly have had no time to post the recipe!
I’ve made a lot of pumpkin recipes this fall much to my husband’s dismay. He claims he isn’t a fan of pumpkin but continues to “try” recipes over and over again. The so-called pumpkin haters in my house have not deterred me from making many pumpkin treats. I’ve made chocolate chip pumpkin bread and roasted butternut squash orrechiette. There’s been pumpkin cornbread (recipe coming soon) and pumpkin cinnamon rolls. And I have an entire pinterest board dedicated to Fall (read: pumpkin) recipes.
Whenever I am looking for a delicious dish, I always turn to Ina. Seriously, every single dish that I have tried of hers is always pretty amazing. I am so confident in the deliciousness of her food that I have actually made Ina recipes that I have never even tried before and served them to company. Isn’t that the number one rule for entertaining: NEVER serve something that you have not made before? I mean, if that isn’t the truest test of faith! I do have to admit that this behavior even makes the most faithful nervous but Ina has never led me astray.
My baby girl is ONE! I can’t even believe how fast the past year has flown by. Each and every day with this little girl keeps getting better and better. She has so much personality already and is always laughing and smiling – unless of course, it is her first birthday party in which she refused to crack a smile for a single picture. Stubborn. We are in serious trouble.
I had always said that I would probably have a small party with family only for G’s first birthday. I had done a lot of event planning in a past job and have been over it ever since. Two months out, I started browsing on pinterest and things started spiraling out of control!
You should probably make this now. Why? Because it is delicious, obviously. Plus, it pleases both the man and the woman. It is healthy, but it tastes decadent. It is packed with all the flavors of chili then tossed with quinoa and baked with a little bit of cheese. The perfect comfort food. Yes, I went there.
