Homemade Roasted Chicken Stock | Plum Pie

We go through at least one rotisserie chicken every week. It makes for a quick protein with some veggie sides when you have 30 minutes to get dinner ready and a toddler pulling at your leg. I use it in all kinds of bakes like this quinoa bake or these white enchiladas or Andrew’s favorite, this jambalaya. And the easiest thing to make with leftover chicken is roasted chicken stock, of course. Throughout the week, I keep a bag in the freezer where I put picked apart rotisserie chicken bones, onion skins, and herbs that I don’t want to waste. I’ll put the ends of green onions or leeks, the leaves from celery and the peel of carrots or the half used box of mushrooms.

Whenever I am looking for a delicious dish, I always turn to Ina. Seriously, every single dish that I have tried of hers is always pretty amazing. I am so confident in the deliciousness of her food that I have actually made Ina recipes that I have never even tried before and served them to company. Isn’t that the number one rule for entertaining: NEVER serve something that you have not made before? I mean, if that isn’t the truest test of faith! I do have to admit that this behavior even makes the most faithful nervous but Ina has never led me astray.

You should probably make this now. Why? Because it is delicious, obviously. Plus, it pleases both the man and the woman. It is healthy, but it tastes decadent. It is packed with all the flavors of chili then tossed with quinoa and baked with a little bit of cheese. The perfect comfort food. Yes, I went there.

It has been a crazy week over here at Plum Pie. Work has been complete insanity and Miss G’s nap/sleep schedule has been a little off with daylight savings time. I mean, I can hardly complain but this mama really needs that extra 30 minutes to an hour of extra sleep in the am. So, for the past few days, I have been not been running at full capacity.

Sleep deprivation always makes me crave comfort food. Plus, it finally feels like Fall in Dallas! I picked up my trusty copy of Ina Garten’s Foolproof, dusted it off, and decided only jambalaya would do. Delicious, easy, relatively quick, and perfectly comforting. You can always count on Ina for a good meal. Plus, it is Andrew the H’s favorite. Brownie points for me!

Yesterday, I had the sudden urge to go running outside. This may not seem very newsworthy, but I rarely, if ever, have these urges. So when these urges strike, I have to take advantage of them immediately. Every now and then, I will go for a run on a beautiful day and feel refreshed and fantastic. More often, I go on a run, my knee starts hurting towards the end, I get bored or lost, or my legs start itching so badly that I have to wobble home (don’t ask why this happens; I think it is because my legs aren’t always used to getting blood flow at such high rates making them itch like craaaazzy).

Cranberry Pecan Chicken Salad | Plum Pie

My all-time favorite chicken salad has to be the cranberry chicken salad from Celebrity Cafe & Bakery in Dallas. I still hold a special place in my heart for Wrightsville Beach, NC’s best at Robert’s Market (in both regular and low-fat), but Celebrity’s crunchy, sweet cranberry version wins by a landslide. When I lived in Dallas, my office was conveniently located around the corner from Celebrity in Highland Park Village. At least once a week, I picked up the cranberry chicken salad, changing it up a bit each time by ordering either the sandwich version or the salad version (you know, when I was trying to be “healthy”).
