It’s pretty clear that we love pimento cheese around here. I mean this is the second pimento cheese recipe I have posted in less than a year. Pimento cheese is a staple in most southern households and growing up, you usually could find pimento cheese or chicken salad in the fridge at my house. But I never really was a fan of pimento cheese until after I was pregnant. It is so strange how your tastes can change after having a baby! Now I can’t get enough…clearly.

NOW, you don’t have to! We didn’t even stop at one kind of chocolate chip because that would be way too boring. These treats have six, yes six kinds of chips.
Whenever I am looking for a delicious dish, I always turn to Ina. Seriously, every single dish that I have tried of hers is always pretty amazing. I am so confident in the deliciousness of her food that I have actually made Ina recipes that I have never even tried before and served them to company. Isn’t that the number one rule for entertaining: NEVER serve something that you have not made before? I mean, if that isn’t the truest test of faith! I do have to admit that this behavior even makes the most faithful nervous but Ina has never led me astray.
You should probably make this now. Why? Because it is delicious, obviously. Plus, it pleases both the man and the woman. It is healthy, but it tastes decadent. It is packed with all the flavors of chili then tossed with quinoa and baked with a little bit of cheese. The perfect comfort food. Yes, I went there.
We’re making candy, y’all! Listen, I am not going to lie and pretend that making caramel is easy. Or that I didn’t accidentally burn the first batch. And that it wasn’t rock hard. I guess this is what optimists call brittle. Anyway, I love a good cooking challenge and had yet to cross candy off the list. So a little burnt caramel wasn’t going to deter me.
Happy New Year! We have all been struggling with a pretty serious cold at our house. First, Grace started feeling sick. On New Years Eve, after throwing up a few too many times, I took her to the doctor to find out that she had a bad cold that had settled in her chest and she had two ear infections. As soon as we left the parking lot, I started to feel congested, too. I can’t say I’m that surprised. When a snotty baby sticks her hands in your mouth all the time, it is pretty much a miracle if you come out on the other side without contracting his or her illness. Even Andrew the H is coughing. She is a sneaky one with those snotty hands!
This breakfast casserole is a Christmas morning staple in our house. It is incredibly easy to throw together the day before and then you just pop it in the oven an hour before you would like to serve it. Sausage and apples are a delicious combo and honestly, they are so subtle in this dish. You could leave them out if you’d like, but they really do add a yummy sweetness to the dish. If you are a fan of breakfast casseroles, you will absolutely love this one!
I swear, if I eat another cookie, there is a really good chance that I might turn into one. I have talked endlessly on PP about how much I love dessert. Honestly, there isn’t a dessert I’ve met that I haven’t really liked. But cookies are pretty much my weakness which makes this time of year both dangerous and delightful.
