I am sure that I am breaking some sort of blogging rule by posting a salad recipe on a Friday. Salads are for Mondays after you have been eating crap all weekend long and you decide, Oh, it’s Monday, I am going to eat salads all week but then you only eat salad on Monday. For lunch. Since it is the holiday season, I was just thinking that maybe you are entertaining and just dying for a show stopping salad recipe. Or maybe you are procrastinating at work and trying to plan dinner for next week. Or maybe you are a person with self control and eats salad all week and on the weekends, too (what is your secret?!)

Happy New Year! We have all been struggling with a pretty serious cold at our house. First, Grace started feeling sick. On New Years Eve, after throwing up a few too many times, I took her to the doctor to find out that she had a bad cold that had settled in her chest and she had two ear infections. As soon as we left the parking lot, I started to feel congested, too. I can’t say I’m that surprised. When a snotty baby sticks her hands in your mouth all the time, it is pretty much a miracle if you come out on the other side without contracting his or her illness. Even Andrew the H is coughing. She is a sneaky one with those snotty hands!

My good eating habits post-baby immediately came to a halt the day we hosted Thanksgiving with Friends two weeks before the real Thanksgiving. Immediately after Turkey Day #1, my BFF and family came to the Big D for Gracie’s Baptism weekend which obviously included more food. And then, the actual Thanksgiving holiday was here and leftovers happened. Oh, and then apple pie for breakfast. You get the idea. It wasn’t pretty.

Who has to work this week, raise your hand. Okay, now, who is actually—I mean, really working this week and who is just catching up on Google Reader, pinning new pics to Pinterest? Yep, that’s what I thought. I mean, I already did a much needed re-org of my work inbox, cleaned off my desk, put together some emails to shoot out on Tuesday when the rest of civilization goes back to work, and created not one, but two pretty awesome if-I-must-say-so-myself Pandora radio stations. I guess you could say that it has been a pretty productive non working, work week!

My all-time favorite chicken salad has to be the cranberry chicken salad from Celebrity Cafe & Bakery in Dallas. I still hold a special place in my heart for Wrightsville Beach, NC’s best at Robert’s Market (in both regular and low-fat), but Celebrity’s crunchy, sweet cranberry version wins by a landslide. When I lived in Dallas, my office was conveniently located around the corner from Celebrity in Highland Park Village. At least once a week, I picked up the cranberry chicken salad, changing it up a bit each time by ordering either the sandwich version or the salad version (you know, when I was trying to be “healthy”).

Brussels Sprouts Hash with Caramelized Shallots

I know what you must be thinking. Brussels sprouts? Really? Yes. Really. And before you judge, these are not your typical brussels. I was not one of those kids that grew up in a household where I was forced to eat brussels sprouts. Not that we didn’t have veggies at my family dinner table, but I just don’t remember having this veggie until high school when my mom made a delicious roasted brussels sprouts and cauliflower dish (also from Bon Appetit). I never really grew up knowing what an aversion to brussels sprouts might feel like. Apparently, I am close to being alone in this category. After a quick poll, I found that many people say they either HATE brussels sprouts or they don’t really like them much. This made me sad as a brussels lover.

Roasted Zucchini with Ricotta & Mint

It seems like this summer has been filled with an abundance of peaches and squash (zucchini is included in that group, and we are talking about the summer varieties today) so far. Things on the menu at my house/apartment lately have included grilled chicken with peaches, peach ice cream, and peach-blackberry cobbler. I’ve made Homesick Texan’s summer squash enchiladas, simple sauteed squash, and Smitten Kitchen’s zucchini & ricotta galette. And it is only July! I know, things are getting out of control over here. And, to be quite honest, I have only just begun my peach/squash madness (recipes and posts to come shortly, I promise).
