Well, it’s a miracle that I haven’t had a heat stroke yet. It is still at least 105°F outside every. single. day. I mean it’s only been two months of torture. But I promise I won’t groan about the weather today. Besides, I am hopping on a plane to Knoxville, Tennessee, where it is a balmy 89°F. I bet the grass is green there, the bushes full, and the flowers abloom. I can’t even wait! Plus, my BFF since the beginning of time just had a baby boy who I can’t wait to coo at all weekend long!
Well, I hope you didn’t think I forgot about you! I sincerely apologize for my lengthy hiatus. I had had big plans to write a post before heading off to Italy last Monday, but for some reason, I just couldn’t get it together. Shocking, I know. Between packing, eating, sleeping, and touring all historical landmarks within a 30-mile radius of Charlottesville, I had little time to think. My apologies.
There is really nothing better than a middle of summer tomato from the farmer’s market. And after tasting one, it is even harder to eat mid-winter grocery store tomatoes. So what’s a tomato-loving girl to do during the winter months? Why, make slow roasted tomatoes, of course! These jewels are fool proof and provide the perfect flavor pop for your winter tomato blues. They take less than 5 minutes to put together then slowly caramelize and shrivel in the oven for most of the morning (or afternoon). If you have never tried slow roasted tomatoes before, you will be shocked by the change of flavor from simply roasting super low and super slow.
The weather has been dreadful lately, and I have had little to no interest in leaving my house. I pack all of my errands into one outing, so I only have to dart from my car to my apartment door twice. And after weeks of sitting in my perpetually cold home office bundled up in a puffy jacket, I finally bought a space heater which has literally SAVED my life. Hello, spring? Are you out there? Please! Hurry!!!
Unfortunately, this weather makes me crave hearty, stick to your ribs, warm your bones fare. What, you say? Weren’t you just preaching about being nutritious last week—your only New Year’s resolution? Yes. it is true. I did say that. We are taking baby steps over here people. And while on the subject, WHO came up with the bright idea to make healthy eating resolutions smack dab in the middle of winter??
I have been saying for months that I am going to start a food blog. In fact, I started a “trial” food blog in January during one of three blizzards that bludgeoned the D.C. area. With only three posts and the most embarrassing photos you have ever seen, I decided to take a short hiatus to read up on other blogs and spend some (key word: some) time planning a new look and theme. And when I found out 2 weeks ago that I was a finalist in Food52’s Best Caesar Salad recipe, I decided that I needed to super charge my blogging efforts. Unfortunately, life kicked in and work has been a whirlwind the past 2 weeks. I literally feel like I have been swept up in a tornado, spun around a few hundred times, and dumped in a random field. Okay, that was dramatic but you get the idea.
